Beef and Beetroot Curry

Incorporating vegetables with meat is one way of doing it. Beetroot and meat is a healthy and tasty combination you would love to try.
To make it healthier, fry onion in a frying pan. Take out fried onion on a strainer, keeping a bowl or plate for the oil.
Chukandar
(beetroot) is a slightly sweet vegetable, any curry made with this vegetable also
has a tint of the sweetness of it.
Ingredients
Onions 2 - medium size (chopped for
frying)
Red Chili powder - 2 tsp
Coriander
Powder - 2 tsp
Turmeric
Powder - 1/2 tsp
Cumin
Seeds - 1/3 tsp
Cinnamon
Stick - 2 - 4
Cloves
- 3 - 4
Cardamom
- 3 - 4
Ginger/Garlic
paste - 5 - 6 tbsp.
Meat
- 1 Kg with bone
Beetroot
7 - 9 (boiled, peeled, and cut)
Directions
1- In a deep pan, add 2 to 3 cups of water, and boil beetroots
in it. It will take 15 to 20 mins for them to boil. If you want to boil it
fast, a pressure cooker is the best option to use. Once boiled, let them cool
and peel skin. It should come off easily. Then cut them into cubes and keep
them aside for later use.
2- In a wok or deep cooking utensil, add cooking oil and fry onions till light brown, now add 5 tablespoons of ginger/garlic paste. Saute till the raw smell is gone.
3- Add coriander powder, red chili powder, turmeric powder, and salt. Saute properly add a little water if required. Now add Cardamom, cumin seeds, cloves, and cinnamon sticks. Saute again and add meat. Mix well. Put on the lid and let it cook till the meat is tender.
4- Add beetroot when the meat is tender and again let it simmer for 15 mins. After 15 mins turn off the flame and sprinkle roasted cumin powder. Cover with the lid to preserve the aroma.
