Vegetable Rice

Ingredients
Dry Roasted Masala
Cardamom - 7 - 8
Cloves–6 - 7
Black Pepper - 1 tsp.
Cinnamon - 4 - 5
Cumin Seed - 1 tsp.
Other
Ginger & Garlic Paste -1 tbsp.
Zucchini - 1 (cut into cubes)
Carrot–2 (cut into cubes)
Rice
Red Chili Powder - 1 tsp.
Green Chili - 1
Salt - To Taste
Directions
1- Put all dry masala (Cardamom,
Cloves, Black Pepper, Cinnamon, Cumin Seed) in a pan
and dry roast them, grind them into a coarse powder.
2- In a deep pan/wok, pour cooking oil and add ginger & garlic paste. Sauté for
a minute or two.
3- Now, add red chili powder, zucchini, carrot, salt and stir everything and add
green chili. Splash water so that nothing sticks to the pan.
4- Add Rice
and prepared masala, mix everything. Pour water, make sure it submerges the rice.
5- Put on the lid & cook rice on high flame for 5 minutes till the water
boils, then reduce the heat to medium and cook for about 15 minutes.
