Vegetable Rice Recipe


Think white rice is boring? Not anymore. Try our Zucchini and Carrot Rice recipe, it is full of flavor, healthy, and oh so yummy.

Ingredients

Dry Roasted Masala


Cardamom - 7 - 8
Cloves–6 - 7
Black Pepper - 1 tsp.
Cinnamon - 4 - 5
Cumin Seed - 1 tsp.

Other

Ginger & Garlic Paste -1 tbsp.
Zucchini - 1 (cut into cubes)
Carrot–2 (cut into cubes)
Rice
Red Chili Powder - 1 tsp.
Green Chili - 1
Salt - To Taste

Directions

1- Put all dry masala (Cardamom, Cloves, Black Pepper, Cinnamon, Cumin Seed) in a pan and dry roast them, grind them into a coarse powder.

2- In a deep pan/wok, pour cooking oil and add ginger & garlic paste. Sauté for a minute or two.

3- Now, add red chili powder, zucchini, carrot, salt and stir everything and add green chili. Splash water so that nothing sticks to the pan.

4- Add Rice and prepared masala, mix everything. Pour water, make sure it submerges the rice.  

5- Put on the lid & cook rice on high flame for 5 minutes till the water boils, then reduce the heat to medium and cook for about 15 minutes.
