recipe for vegetarians.
Cooked in a rich and aromatic blend of spices, all the more reason to put together and try this curry.
Red kidney beans are an ideal
source of plant-based protein and fiber, are also packed with vitamins.
A day before cooking, wash red kidney beans
and soak in warm water with a pinch of baking soda overnight. This helps in
softening and cooking the beans. Give a nice rinse to beans with fresh water, before putting them in the cooking pot.
Boiled Rice or separately as a
snack.

Ingredients
Onion - 2 Small-sized
Ginger/Garlic paste - 4-5 tbsps.
Yogurt - 4-5 tbsps.
Coriander Powder - 1 tbsp.
Red Chili Powder - 1/2 tbsp.
Salt - To Taste
Tomato - 1 Medium-sized, cut into cubes
Cumin Seeds - 1 tbsp.
Green Coriander Leaves
Mint leaves
Directions
1- In a pressure cooker, pour cooking oil and add chopped onions. Fry onions till
golden brown, add ginger & garlic paste, sauté.
2- Now, add the remaining ingredients, give it a nice stir. Add water to submerge
beans. Cover the lid of the cooker, cook for 15 - 20 minutes on pressure.
3- Turn off
the flame and let the pressure subside before opening the lid.
4- Simmer beans curry on high flame for the oil to separate. Adjust gravy as per your requirement.
