Easy Mix Vegetable Dry Curry

Vegetables are the perfect healthy meal option. You can prepare this curry with
season’s available vegetables and follow our recipe to make a dry vegetable of
your choice.
This is the simplest mix of vegetable curry, in which I have used potato, carrot, and peas (I love the combinations of these three vegetables). It's very easy and fast to prepare this dish, tastes as amazing as any meat dish.
This mix of
vegetable curry can be a base curry for any vegetable pasta dish, you can also
make pakora (fritters) from it. So many ideas for this dish 😋. I might as well try all these ideas and see
how it will turn out.
What To Serve With?
-Flatbreads (chapatti, paratha, naan,
puri) with raita and pickles.
-Rice or khichdi with raita and pickles

Ingredients
Onions–3 (medium-sized) chopped or thinly
sliced
Ginger & Garlic Paste–3 tsp.
Cooking Oil
Red Chili Powder–½ tsp.
Salt–To Taste
Water–as required
Potatoes–4 (cut into cubes)
Carrot–2 (cut into cubes)
Green Peas–1 cup
Tomato–1 (cut into cubes)
Cilantro–handful (finely chopped)

Peel and cut onions into small cubes. In a pan or wok, pour in vegetable oil
and heat it. Once warm, put in cut onions and sauté till translucent.
2- Add ginger and garlic paste, sauté for a minute. Now, add red chili powder and salt. Let everything crackle.
3- Sprinkle little water so that nothing sticks to the pan, now add potato, carrot, and peas. (any vegetable mix of your choice). Stir and sauté.
4- Cut tomato, chili, and chop cilantro. Add these to the pan and stir, cover, and cook for about 10 minutes.
