Dahi Baray

Dahi Baray is a popular snack and side dish in Pakistan and India. Traditionally Dahi Bhalla/Dahi Vada is made by grinding different Dal (lentils) into a paste. In some households, it is also made by gram flour (besan) which is made into a thick batter form, then deep or shallow fried to make into dumplings. These dumplings are then soaked in warm water to make them fluffy and less crunchy.
I like the crunchiness of dumplings, so I have
directly dunk them in the yogurt mixture.
This is the most popular snack during
Ramadan, one of the must-have dishes while breaking fast in
Pakistan. It is also a popular and most demanded side dish
in EID celebrations.
My recipe of dahi barey has a twist in it,
you can easily guess the twist from the name of the dish. You guessed it right;
it has tarka in it.
The tarka gives dahi baray kick of amazing
taste, the spices of tarka can be added or subtracted as per
your liking.
To enjoy this dish to the fullest, eat it while
it's warm, with tamarind and mint chatni.
We can make this dish with a mixture of grounded lentils. However, I have used gram flour (besan) for this dish.
INGREDIENTS
Gram Flour (besan) - 2 cups.
Whole wheat flour (anta) - 1/2 cup.
Baking Soda - 1/4 tsp.
Red Chili Flakes - to taste.
Salt - to taste.
Water - as required.
Yogurt - 3 to 4 cups.
Sugar - 3 to 4 tsp.
Salt - To Taste.
Black Pepper Powder - 1 tsp.
Cooking Oil.
Garlic Cloves - 2 to 3.
Cumin Seeds - 2 tsp.
Dried pimento - 6 to 7.
DIRECTION
1- In a mixing bowl, add
gram flour, whole wheat flour, baking soda or powder, salt, and red chili
flakes.
2- Add water and mix into a thick batter. Beat the batter nicely to make fluffy and crunchy dumplings.
3- In a frying pan, add cooking oil, let the oil heat. Add a teaspoon of batter to a frying pan to make each dumpling. Fry till dumplings are crunchy and cooked.
4- In another mixing bowl, add yogurt, sugar, black pepper powder, and salt. Beat everything together and make a thick yogurt mixture.
5- Now arrange all the dumplings in the serving tray or dish, pour all the yogurt mixture on the dumpling.
6- Prepare tarka for dahi baray, in a frying pan shallow fry cumin seeds, dried pimento, and chopped garlic cloves. You can add Kari Patta (curry leaves) also to the tarka.
7- Pour tarka on the dahi baray and serve it hot with chatni of your choice.
